Gnuplot assigns each element of a plot or splot command a new set of line properties taken from a predefined sequence. The default is to distinguish successive lines by a change in color. The alternative selected by set monochrome uses a sequence of black lines distinguished by linewidth or dot/dash pattern. The set color command exits this alternative monochrome mode and restores the previous set of default color lines. See set monochrome, set linetype, and set colorsequence.
